Creamy bell pepper-peanut-coconut curry
1 tbsp olive oil
1 tsp mustard seeds
1 tsp cumin
2 garlic cloves
1/2 inch ginger
1/2 onion
1 green bell pepper
1/2 red bell pepper
2 medium size tomatoes
3/4 cup water
1/4 cup roasted peanuts
2 tbsp fresh grated coconut
1 tbsp tahini paste
2 tsp coriander powder
1 tsp chili powder
Pinch turmeric
Salt to taste
Garnish with cilantro (optional)
Stir-fry: oil, cumin, mustard seeds, onion, garlic, bell pepper, and tomatoes. Add turmeric and salt at this time. Cook for 5 min. Bell pepper should still be crisp.
Blend: peanuts, coconut, coriander/chili powder, ginger tahini, water.
Add blended ingredients to stir-fried mixture. Cook for 10 min.
Serve with tortillas/chapatti! I guarantee its delicious! :)
