What do I love more than toast? BAKED BEANS & TOAST! I love 365 brand’s organic baked beans, which are vegan and have 6g of protein per serving! So yummy and quick to make!

Am I always eating couscous?? The answer is yes. Absolutely. This is couscous with tomato, kale, garlic, onion, cannellini beans, olives and sun dried tomatoes. Also I’m in love with frozen kale! It’s a fraction of the price of fresh kale, doesn’t go bad, and lasts foreva.

My boo and I went to EPCOT for the 17th annual Food and Wine Festival! I wasn’t sure what vegan options they would have, but I was pleasantly surprised when I saw that the very first food stall was a vegan one called Terra (Sponsored by Gardein)! The food was absolutely amazing and I’m just itching to recreate those recipes! Our favorite was the Chili Colorado with Gardein Beef tips! For all the vegetarians out there, they did have a lot of vegetarian options (mostly dessert) to choose from. We’ll definitely be going back next year!

Arrabiata Pizza from Portobello (awesome vegan restaurant in Portland)! The cashew cheese was AMAZING! It is now my mission in life to replicate that cheese. Also I apologize for the half eaten pizza. Obviously I couldn’t wait to take a picture before I started stuffing my face :)

Creamy bell pepper-peanut-coconut curry 

1 tbsp olive oil
1 tsp mustard seeds
1 tsp cumin
2 garlic cloves
1/2 inch ginger
1/2 onion
1 green bell pepper
1/2 red bell pepper
2 medium size tomatoes
3/4 cup water
1/4 cup roasted peanuts
2 tbsp fresh grated coconut
1 tbsp tahini paste
2 tsp coriander powder
1 tsp chili powder
Pinch turmeric 
Salt to taste
Garnish with cilantro (optional)

Stir-fry: oil, cumin, mustard seeds, onion, garlic, bell pepper, and tomatoes. Add turmeric and salt at this time. Cook for 5 min. Bell pepper should still be crisp.

Blend: peanuts, coconut, coriander/chili powder, ginger tahini, water.

Add blended ingredients to stir-fried mixture. Cook for 10 min. 

Serve with tortillas/chapatti! I guarantee its delicious! :)
